Wild harvested from the cold, clear waters of the Canadian North Atlantic, Clearwater Arctic Surf Clams are prized for their sweet taste and unique texture.
Preparation instructions
Frozen Arctic surf clams are ready-to-serve once thawed and can be used in both cold and hot dishes.
-
Thawing:
- Overnight thaw: For best results, defrost the clams overnight in the refrigerator.
- Quick thaw: For a faster method, place the sealed bag of clams under cold water for about 5 minutes or until thawed.
- Warning: Do not use a microwave to defrost and do not refreeze after thawing.
-
Cooking:
- Cold dishes: The clams are pre-cooked and best used in cold preparations like sushi and salads, as overcooking can make them chewy.
- Hot dishes: If adding to a hot dish like soup or stir-fry, add them at the very end to prevent over-cooking.
-
Serving:
- For sushi or sashimi, cut the clams straight through the middle, trim off any loose ends, and discard the black material from the gut cavity.
