- Rinse dried scallops and soak in warm water for about 30 - 40 minutes
- Combine lobster bodies, rice, and water into a medium-size pot, turn to high heat and bring to a boil
- Reduce heat to medium and cover the pot halfway to ensure nothing boils over - cook for 30 minutes
- Mix consistently so that the rice doesn't get stuck to the bottom of the pot
- Mince the ginger and chop the green onions then set aside
- Chop prawns into small bite size pieces (approximately 1 cm)
- Drain dried scallops and shred to smaller pieces with hands then add them to the pot
- Also add the minced ginger and cook for another 15 - 20 minutes until the texture reaches your desired consistency
- Add in green onion, white pepper, sesame oil and salt to taste
- Serve warm and enjoy!
