Seafood Congee


The perfect meal to hit the spot on a cold day. The addition of seafood really elevates each ingredient creating a flavourful and effortless comfort dish. 

Ingredients:
  • 2 lobster bodies (head)
  • 1/2 cup dried scallops
  • 10 pieces of prawns (chopped to 1 cm pieces)
  • 1/2 teaspoon minced ginger
  • 1 cup rice
  • 8 cups water
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 1/2 cup chopped green onion
  • salt to taste
Instructions:
  1. Rinse dried scallops and soak in warm water for about 30 - 40 minutes
  2. Combine lobster bodies, rice, and water into a medium-size pot, turn to high heat and bring to a boil
  3. Reduce heat to medium and cover the pot halfway to ensure nothing boils over - cook for 30 minutes
  4. Mix consistently so that the rice doesn't get stuck to the bottom of the pot
  5. Mince the ginger and chop the green onions then set aside
  6. Chop prawns into small bite size pieces (approximately 1 cm)
  7. Drain dried scallops and shred to smaller pieces with hands then add them to the pot
  8. Also add the minced ginger and cook for another 15 - 20 minutes until the texture reaches your desired consistency
  9. Add in green onion, white pepper, sesame oil and salt to taste
  10. Serve warm and enjoy!
